This is the first thing the Giganti family exclaims when the first "Olio del Capùnto" is pressed.
For four generations, the family has harvested the fruits from their over 25,000 olive trees scattered across the territories of Rapolano Terme and Asciano, and then processed them in the mill owned by Sinalunga.
Thus, the Tuscan and Organic PGI oils are born, unmistakable from the first taste: medium fruity and characterized by a good balance between bitterness and spiciness, just as a Tuscan oil should be.
The strong connection with the territory is evident from the name itself: in the Sienese tradition, "Capùnto" represents the head of the mill, the one responsible for the quality of the oil throughout the entire production chain. And of course, Oliviera Sant'Andrea has its own "Capùnto" too!
