Local Producers

The story began in 1963 when our father Alfonso, then 17 years old, arrived from Sardinia to Asciano (SI), in the Crete Senesi. And it was here that he met his mother Farida, from a very Tuscan family: born and raised in Montecalvoli, just a stone's throw from where the company's headquarters are today.
The company is located in Bellaveduta, on the slopes of the Lecceto and straddling the municipalities of Asciano and Trequanda. The border is traced by the Asso river, which has its source not far from the farm land.
Today the farm covers 160 hectares, 60 of which are woodland and 100 in rotation between arable land and pastures. We have always been organic, 'because our parents believed in responsible agriculture back when no one was talking about the environment': our crops have been certified organic since 2000, so now for almost twenty years. 
In 2013, the newly founded Fratelli Farina agricultural company acquired the family land and started a delicate redevelopment of the farm, the first step of which was the establishment of the dairy.
Barley and oats are grown on the farm. The produce is entirely reused for animal husbandry: in winter and during dry periods it is fed to the animals together with hay. The latter is composed of sown essences, such as alfalfa or clover from Alessandria, and the mowing of clovers and spontaneous grasses that grow on the farm's land: it is these that give the hay (and consequently the milk) those incomparable fragrances, and different according to the plots, for which the cheeses of this area are famous.
Farming is extensive: the animals graze in the open air most of the time.
We only have Sardinian sheep, the main Italian dairy breed: small, rustic animals that are completely incompatible with intensive farming.
The dairy produces fresh and aged cheeses, with raw and pasteurised milk, ricotta, white yoghurt and different flavours, all made from milk freshly milked from our sheep. Our cheeses change with the weather, the seasons and according to our desire to experiment. They speak of us and our being.
The farm shop consists of an original agricultural food truck, which we accompany with our slogan 'the cheese where the milk is born', because the food truck also serves to take consumers to really see where the milk is born, to smell the fragrances of wild herbs and to grasp the colours, the essence and the context that gives each cheese its own personality.

Wednesdays from 4 p.m. to 7 p.m.
on Thursdays from 10 a.m. to 1 p.m.
on Fridays from 4 p.m. to 7 p.m.
Saturdays and Sundays from 10 a.m. to 1 p.m. and 4 p.m. to 7 p.m.
